  • Kalo is the Hawaiian name for the taro plant.  Kalo plays an important role in Hawaii's culture, mythology, and cuisine.  At its peak, Hawaii produced over 300 different varieties of kalo.  Today, only about 100 remain.  The kalo plant takes 7 months to harvest, and lo'i fields are used in rotation, so that the lo'i in use can have sufficient irrigation and the soil can be replenished between uses.  Once harvested, kalo can be incorporated into many foods.  The leaves are commonly used to make laulau and poi, staples at any luau.
